Omelette in a bag

First off. 
Is it omelet? or omelette?
Secondly.
does it matter?

Moving on...
We meet Sunday nights with our house church/small group. Each month we meet at a different house.
Which is a nice little rotation so that each family doesn't get stuck with cleaning up, prep, etc each Sunday.
This month is at our house! I absolutely love having everyone over. Seriously, i love it. 
It also gives me a reason to clean my house weekly. Because honestly, i need motivation. 

Each week, we create a food list with an overall theme and everyone brings their contribution to the table.

Last week, we made omelets!
IN A BAG. 
Hello girl scouts!
I think it was JoErins idea...or Mirandas. Either way....genius!

Here's how it's done:
 throw some eggs and whatever else you like into a sandwich bag

label your bags if you have multiple people
(note GT$'s)

scramble by mushing on the bag
yes, mush 

drop them all into an already boiling pot of water

everyone can hang out while their eggs are cooking (12-15 minutes)
even do some muscle man modeling like Tommy (no clue!)

then take the baggies out of the water
looky there folks, it's an omelet in a bag

tump 'em out on a plate and enjoy with your friends!
they're a little different texture than the skillet kind, but still tasty (the omelets, not your friends)

add some biscuits and coffee to the mix and you're good to go!
wouldn't these little things be perfect for camping???

I highly recommend them for a group. We'll definitely repeat that meal with our house church.
Have I mentioned how much I love our group?
It's amazing how encouraging it is to meet with the same people weekly, share your heart, your joys and study the Word. 


Now, go scramble up an egg in a bag.

we're excited to spend the weekend with GTs grandad and grandma.
They're pretty remarkable people and I just love spending time with them. They're full of good advice along with some competitive games of 42. I hope when i'm in my mid-80's i'm still whooping up on my grandkids in a friendly game of dominoes.

Dallas: food edition

There are certain things I look forward to when going to Dallas.
It's my favorite place to go for the weekend, or live for a few years.
This might change. But, today, it's Dallas.

So, I decided to start a series of my fave things about the big D.
Today I am starting with the food. Duh. Where else would I start?
I dream about eating out in Dallas...the options are endless and overwhelming.
Seriously, it might take me a few weeks to plan out where I want to eat while we're there.
Luckily, you often can just pick somewhere and it will be delicious.
Most of the restaurants have pretty awesome atmospheres so that totally makes the experience.
Did I mention the patios...everywhere.

Without further adieu, here are my first 3 fave places to eat.
There will be more, I just didn't want to overwhelm your taste buds.

GT and I ate here last Sunday for  brunch.
We ate on the upstairs patio. It feels like part of NOLA french quarter.
The food is stupid good. We split the nature-cakes with blueberries and the San Antonio tacos.

I love sitting on the patio(suprised?) and trying some new way to cook vegetables.
Simply perfect.

Hey baby let's go to Vegas

Vegas is not for the weak.
I am weak, therefore I am not made for Vegas.

GT and I headed to Vegas a week ago for the annual SHOT Show.
The reason we went (i have not announced this yet) is because GT has a new job!
Hooray!
He will be working for the Buck Commander and the show was his first task.
The SHOT show is a huge expo for all things outdoors.
The Outdoor Channel also hosts the Golden Moose Awards for all outdoor shows.
My cousin Willie was the MC and did an awesome job...we were def entertained.

We had a great time and GT was able to meet lots of people in the industry and started to get plugged in.
I hung out at the Duck Commander/Buck Commander booth and walked around alot.
We probably left the hotel twice...crazy.
The expo was in our hotel, yet it took 20 minutes to walk to the booth from our room.
That place was hugemongous.
Seriuosly...I didn't even work and I was exhausted.
We also ate our body weight in delicious food and at crazy late hours.
Vegas kicked my boo-tay.

Sweet and Spice and everything nice

Sweet Potato and Black Beans???

These two lovelies are not normal commrades. Normally, I would turn up my nose at the combo.
Together in the right way...divine.

Here is the recipe for the
Black bean and sweet potato enchiladas!!!

The blend of sweet and spicy is key.
GT loved these...LOVED.
So, I was happy.
Let me say this, I am not a sweet tater fan, but this my friends, this, is doable.
Not only doable, but repeatable.
the stuff: 
2 large sweet potatoes, peeled and diced
smidge of EVOO
1 large garlic clove, minced
One can black beans, drained and rinsed
1 small chile, seeded and minced
One can diced tomatoes, drained
(since I forgot the chile at Kroger, I just used a can of rotel with green chiles for my tomatoes and chiles...it worked great!)
1 tablespoon chili powder
s&p
2 cups salsa (your fave)
8 large flour tortillas
1/4 cup finely chopped red onion (forgot that too and used yellow...worked great)


 
The doing:
1. Roast those diced up sweet potatoes on a baking sheet on 400 for about 20 minutes... they'll be roasty and tender.
2. Turn your oven down to 350F. 
3. Saute the garlic and chile in some EVOO for just a bit until you can smell the deliciousness. (or just the garlic if you're me) 
 Toss in the beans, tomatoes, chili powder. S&P that little bit as you like
Then throw in your roasted tots and let it all get to know each other in that skillet for about 5 minutes.
4. Spread a thin layer of your choice of salsa on the bottom of a baking dish and put it aside.
5.Then fill your tortilla like you would any ole enchilada and layer on top of the salsa!
If any filling is left over, put on top of the enchiladas and then sprinkle with that onion.
6. Cover(so they cook through) and bake about 20 minutes.
I broiled mine for about 2 minutes just to get that golden top. Totally up to you though.

Staying in and eating good

We have joined the ranks of those in the south who are "snowed in".
Let me clarify.
If we were in Colorado, we would not be snowed in.
But, because we are in Arkansas, we are.
Luckily.
Me and GT and the pups. Loverly.
We are going to go into work in about an hour, but at least we had the morning to ourselves on a Monday.
How delightful!
It started snowing yesterday afternoon, so we made the decision to hunker down and stay on the couch.
We watched football and Open Range. I love Westerns. They inspire me, not sure in what way...but inspiring nonetheless. Now, back to the matter at hand...eating good.

Lately, GT and I have decided to eat healthier...more natural foods.
GT always eats well. He makes the healthy choice 95%  of the time or more. Me, on the other hand...not so much. I love unhealthy foods.
So, I started cooking out of our Vegan cookbook and made some surprisingly delicious and new creations.
Sweet potato and black bean enchiladas. Don't judge too quickly. They were divine!!!
Then garbanzo bean, rosemary and zucchini pasta...so refreshingly delicious.
Then, we got snowed in. I made shells n' cheese. And I do not regret it. Sometimes you just gotta. I love those.
Don't judge me.

Yesterday I did something...

that I don't regret.
At all!

I had one of these

Peppermint Chocolate Chip Milshake

And I still don't regret it.

It was perfect.
Everyday around 330 I have to have a snack. Just gotta. It's my crash time.
So, I was out Christmas shopping away and spotted a Chick-fil-A. Jackpot!
Have I mentioned that I'm lactose intolerant?
Oh well. That didn't matter...I love ice cream.
It did matter about 30 minutes later when I was in TJ Maxx.
All that happens with my intolerance is some cold sweating and some killer stomach aches.
Then it just goes away.
In case you needed the details.
Luckily, I was able to walk it off without looking like a menopausal hot flashing woman.
TMI? sorry.

So do I regret the 73894 calories? Nope

Now go try one and try to think of something other than my ailments.

this is my confession

I have a confession

Our bed is unmade.
It goes unmade pretty much everyday.
Remember when I said this and this?

Well, you know what?
Jobs happen people.
Life happens really.

Oh well, at least we're happy and GT could care less if our sheets were tucked in.

Perhaps I will get on a bed-making kick again.
Probably not. Let's just be honest.
It's not that important.
I can barely wake up in the morning.
GT might run out of that dynamite he throws at me to get me out of bed if I keep reaching for those lofty aspirations.

For now, my goal in the morning hours is to leave the house in decent appearance.
Luckily, I wear scrubs and my hair in a ponytail...everyday.
Frankly, if I had to do what most people do and look nice. I'd get fired or just quit in rebellion.
I like my work attire.

That's all.

and tired
